Lemon Poppyseed Muffins – EIP

Lemon Poppyseed Muffins

(180 calories each)

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons melted coconut oil
  • 1/2 cup unsweetened almond milk
  • 2 eggs
  • 1 tablespoon poppy seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 drops “Better Taste” stevia
  • Zest of 1 lemon

Directions:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with 12 liners.
  2. In a bowl, whisk together dry ingredients (flours, poppy seeds, baking powder, soda, salt).
  3. In another bowl, whisk together wet ingredients (eggs, applesauce, oil, milk, stevia, lemon zest).
  4. Slowly fold wet ingredients into dry ingredients until just combined. Don’t overmix.
  5. Divide batter evenly among muffin cups and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool slightly before enjoying.
