Spiced Carrot Cake Muffins – EIP

Spiced Carrot Cake Muffins

(170 calories each)

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/4 cup unsweetened applesauce
  • 1/4 cup unsweetened almond milk
  • 2 eggs
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 6 drops “Better Taste” stevia

Directions:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with 12 liners.
  2. In a bowl, whisk together dry ingredients (flours, spices, baking powder, salt).
  3. In another bowl, whisk together wet ingredients (eggs, applesauce, oil, milk, stevia).
  4. Fold wet ingredients into dry ingredients along with grated carrots and chopped walnuts.
  5. Divide batter evenly among muffin cups and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool slightly before enjoying.
