Double-Chocolate Zucchini Brownies

(150 calories each)

Ingredients:

  • 1 cup grated zucchini
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup rolled oats
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond butter
  • 2 tablespoons honey
  • 2 tablespoons chopped walnuts
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 6 drops “Better Taste” stevia

Directions:

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, combine zucchini, cocoa powder, oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together applesauce, almond butter, honey, and stevia.
  4. Add wet ingredients to dry ingredients and fold until just combined. Stir in walnuts.
  5. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
  6. Let cool completely before cutting into squares and enjoying.
